I like black on white too, however, I think that looks plain. I thought white on black was the same contrast level.....more then any other color on color. Personally I like to stick to black and white, as often as possible. Literally. I use black backgrounds with white text. I just think it sticks out better then black on white. However, something to keep in mind, color is nice, however, a large portion of the population is color blind to a certain extent. Always be sure that places where color is used, and differentiating things of different color is important, to use colors that 'clash' spectrally, so even if someone is seeing it as shades of grey (a severe color blind person), they would still see the difference. My team hasn't had any formal training on interface design, and I didn't want them to get all their ideas from me - better if they have a range of examples! So we're having a couple of workshops where we discuss design principles before we start doing the spec. This application will take a few weeks to write and, if we get it right, be in use for 2-3 years so it's worth putting some thought into.
