Max, Raid 1 - whether software or hardware should be able to unmirror the two discs then reconfigure the second as required, of course you'll lose the redundancy. Make sure you have a good backup !! - also I suggest you unmirror and boot from the first disk and check all is well before reconfiguring the second...
