I work strictly on a $/hr basis. Never had any work outright stolen, but I lost my shirt too many times on projects and got tired of arguing with people on what was and what not included. Especially when they started to complain about all the time I spent "documenting stuff". I've been working that way for 20 years now and like you have never looked back. The client paid me 1/3 up front as a deposit. Then, when the application was nearly done -- the power user knew enough that she didn't need a hand-holding interface -- they just stopped corresponding. I knew they were using the last version I had sent them, but they never paid me and stopped returning my calls and emails -- just flat stole the work. Never worked by the project again.
