Try using resource monitor, there's a tab on the task manager performance tab.
will show what files - including the $MFT are in use as well as the pagefile and
comms links.
Also - could be that you have a search facility building a massive index,
as if you'd need that for the data files and any connected backup drive.
Then there is AV scanning USB drives that have not been excluded.
And - the OS updates that take a relatively short while to install, then a
couple of days to be integrated into the software on the system.
And - the ever annoying SYNC processes, and EDGE sessions that are still
running on unclosed tabs .

It's ongoing. I've gone round and round with al kind of "change this setting
to that and that to this..." It works for a few days and then I'm back to
the "not responding" message for Edge, Outlook, 365... everything I use.
I keep an eye on the Task Manger, run Malwarebytes... if there's something
on my system nothing's finding it.
Just now, in Outooking, clicking Pop Out to get a larger email window did it
-- it's difficult to work.
It's a Dell laptop, nothing fancy or fast because I just don't need that.

Is this an ongoing thing or happened recently after a Microsoft update, I
had an update recently where my system seemed slow and my vpn to work
wouldn't connent, eventually found out it was one of the files installed.
