I leave the folder view open all the time. So the short answer is click on
them.

OK, I have no idea how I did this but I wanted to clarify that it only opens
the folder structure up to new unread emails. It doesn't open up all folders
with unread emails. Which is handier that opening it up to all because what
want to see is the new unread emails displayed in my 100s of folders in tree
structure layout pane. If I want to see unread emails I can just "unread" in
the search folder which will display all unread in that pst/ost file.

I depend on it. I have mine set to display unread and for the folder
structure to open up so the subfolders with unread messages show up in the
tree. 

Never though t of it before but it's kind of odd that you can't turn it off.

Yeah, it's displaying the total number of unread -- or supposed to be.
Sometimes it works, a lot of the time it doesn't -- and then... it just
does. No clue. It's not important though -- I don't really use it.

I've never had that be wrong. Right click on the folder and make sure it's
set to indicate unread messages.

There's a number in blue to the right of each Inbox.
