I actually begrudgingly started using Outlook because that's what my client
base uses. I have no great love for it and would like to switch rather than
trying to teach that dog new tricks all the time!

You could switch to Pegasus Mail. Then you can create your own list of
prefixes to ignore when sorting messages :-)
