The day that people actually "have off"

Where a holiday falls on a non-working day, they take another day
off "in lieu". ie

"New Year’s Day January 1, 2005 Friday, December 31, 2004"

New Years Day is a defined holiday which falls on 1 January. Since
that falls on a Saturday, they are taking the Friday off.

Similarly, because Christmas and Boxing Day fall on Saturday and
Sunday, they are taking Monday and Tuesday off.
