On the webpage where you are editing the post, there should be a
collapsible section called "Categories and Tags" or just "Categories and
Tags" it could be on the right ar at the bottom of the page. Just expand
that and select the category you want. You can even add them from that
expanded section.

On the other hand, if you have created Pages instead of Posts, then the
Categories section won't be available to the pages.
